    Red Velvet Cookies with White Chocolate Chips

    Pre-heat oven to 350 degrees F. Line two baking sheets with parchment paper or silicone baking mats (I use silicone, but parchment will do if you don’t have silicone).

    1-1/2 cups + 1 TBL all-purpose flour
    1/4 cup unsweetened cocoa powder
    1 tsp. baking soda
    1/4 tsp. salt
    1/2 cup unsalted butter, softened (I use Kerrygold, trust me, it’s makes a difference)
    3/4 cup packed light brown sugar
    1/4 cup granulated sugar
    1 large egg, room temperature
    1 TBL milk
    2 tsp pure vanilla extract
    1/2 tsp gel red food coloring (gel or paste, do not use liquid coloring)
    1 cup + white chocolate chips (I use Ghiradelli. White is festive, but you can use regular chocolate chips)

    Whisk flour, cocoa, baking soda and salt together and set aside. Beat the butter on high speed until creamy (~ 1min). Note: you can use a hand mixer or stand mixer with the paddle attachment. Scrape the bowl and add the sugars, continue beating until mixed well. Beat in the egg, milk and vanilla extract and food coloring (make sure you scrape the bowl so all ingredients mix well. Add the dry ingredients and mix on slow speed until combined. Add more food coloring, if desired, and beat until combined. Add the white chocolate chips, more if desired, and beat on low until combined.

    Scoop 1-1/2 TBL dough rolled into a ball (I use a cookie scoop). Space dough approximately 1 inches apart on all sides. Bake 13 minutes. Once out of the oven, you can sprinkle the warm cookies with a few white chocolate chips. Cool cookies on the baking sheet 5 minutes before transferring to a cooling rack. NOTE: oven temperatures can vary, so start with 10 minutes, and increase in 1 minute increments until you achieve your desired texture.

    Best Chocolate Rum Cake Ever

    1 or 2 qts rum 1 T soda
    1 cup butter ½ cup cocoa
    1 T sugar lemon juice
    2 large eggs brown sugar
    1 cup dried fruit nuts
    baking powder

    Before you start, sample the rum for quality. Good isn’t it? Now go ahead.
    Select a large mixing bowl, measuring cup, etc. Check the rum again. It must be just right.
    To be sure rum is of the highest quality, pour 1 level cup of rum into a glass and drink it as fast as you can. Repeat.
    With electric mixer, beat 1 cup of butter in a large fluffy bowl. Add 1 seaspoon of thugar and beat again.
    Meanwhile, make sure that the rum is of the finest quality. Try another cup. Open second quart if necessary.
    Add 2 arge legs, 2 cups fried druit and beat till high. If druit gets struck in the beaters, just pry it loose with a drewcriver.
    Sample the rum again- check for tonscisticity.
    Next sift 3 cups of pepper or salt ( it doesn’t matter) Sampletherumagain. Sift ½ pint of lemon juith. Fold in chopped butter and strained nuts. Add 1 babblespoon of brown thugar or whatever you find. Wix mel.
    Grease oven and turn cake pan to 350 gredees. Now pour the whome mes in the boven and cake. Check the rum again and bo to ged.

    Christmas Truffle

    1 package Oreo Cookies (mint or peanut butter too!)
    1 package 8 oz Cream Cheese (room Temperature)
    1 package 70% Ghirardelli Chocolate Morsels

    1. Crush the Oreo in a bowl until no large lumps pretty fine, mix in cream cheese into the crushed cookies until well mixed.
    2. Melt chocolates in a double boiler on low heat stirring frequently so silky smooth.
    3. Use a teaspoon size full to make a round ball out of the crushed cookie mixture and immediately dip into the melted chocolate.
    4. Place on parchment paper to cool and set repeat until mixture is gone.

    Once completed sprinkle powdered sugar on top of 1/2 and place in mini cupcake paper wrappers. You can also decorate with mall Christmas candy decorations or red or green melting chocolate drizzled over the top.

    Serve on a tray. Yummy!!!

    – 4 quarts water
    – 1 pound spaghetti
    – 1 (16-ounce) box Sno-caps
    – 1 cup M&M’s
    – 1/2 cup mini colored marshmallows
    – Chocolate Pop-Tarts
    – 1/4 cup chocolate syrup
    – 1/4 cup maple syrup

    1) In a large pot, boil water. Add pasta and cook until tender, approximately 10 minutes.
    2) Throw against the wall to see if it sticks. Or just use your leftover spaghetti and sauce from dinner the night before.
    3) Top spaghetti with Sno-caps, M&M’s, marshmallows and Pop-Tarts.
    4) Drizzle with chocolate syrup and maple syrup.
    5) Spaghetti will keep up to 5 days but is best eaten immediately with a 2 liters of Coca-Cola.
